Healthy and Quick Baby Snacks

My new go-to baby snacks are homemade fritters and fruit & veg popsicles. The fritters because they are made of just three things, so they are super simple to make and cooked in less than 5 minutes and fruit & veg popsicles because again, they are really quick to make, hardly any prep and are the perfect baby snacks in this hot weather!

If you want to get more creative in the kitchen but are lacking some inspiration, homemade fritters and fruit & veg popsicles should be the next things you try. They are both really tasty, on-the-go baby snacks with lots of hidden goodness!

3-ingredient Fritters

With just three simple ingredients, homemade fritters can be cut into bite-size shapes so they are a great finger food which encourages self feeding. Fritters have a super soft texture and are a great way to introduce your baby to lots of different vegetables. The great thing about fritters is that you can be really creative and you’ll be surprised to see that most of the ingredients you need to make them will probably be in your cupboards already!

My 3 favourite fritter recipes

Sweet potato fritters

Sweet potato fritters

Ingredients:

  • 1 x medium sized sweet potato
  • 2 x eggs
  • 2 x sprinkle of Cumin (gives them a brilliant smokey flavour)

Directions:

  • Grate the whole sweet potato into a bowl
  • Using the same bowl, add your 2 eggs and sprinkle some cumin
  • Mix all the ingredients together
  • Heat up a little olive oil in a pan
  • Spoon out 1x tablespoon of the mixture onto the hot pan, and flatten to your desired thickness (thin fritters are better to start with)
  • Spoon out the rest of the mixture to make 4 fritters on the pan (depending how large your pan is)
  • Leave your fritters to cook for 2 minutes on one side then flip and cook for a further 2 minutes on the other side
  • Once your fritters are cooked, take them out the pan and leave to cool on the side.

 

Cheese & courgette fritters

Ingredients:

  • 1/2 bowl of grated cheese
  • 1/2 courgette
  • 2 x eggs

Directions:

  • Grate 1/2 courgette into a bowl
  • Using the same bowl, add the cheese and your 2 eggs
  • Mix all the ingredients together
  • Spoon out 1x tablespoon of the mixture onto the hot pan, and flatten to your desired thickness (thin fritters are better to start with)
  • Spoon out the rest of the mixture to make 4 fritters on the pan (depending how large your pan is)
  • Leave your fritters to cook for 2 minutes on one side then flip and cook for a further 2 minutes on the other side
  • Once your fritters are cooked, take them out the pan and leave to cool on the side.

 

Pea & sweetcorn fritters

Ingredients:

  • Peas (frozen) 1/2 bowl (medium sized)
  • Sweetcorn (frozen or tinned) 1/2 bowl (medium sized)
  • 2 x eggs

Directions:

  • Add your eggs into a bowl
  • Add your peas and sweetcorn
  • Mix all the ingredients together
  • Spoon out 1x tablespoon of the mixture onto the hot pan, and flatten to your desired thickness (thin fritters are better to start with)
  • Spoon out the rest of the mixture to make 4 fritters on the pan (depending how large your pan is)
  • Leave your fritters to cook for 2 minutes on one side then flip and cook for a further 2 minutes on the other side
  • Once your fritters are cooked, take them out the pan and leave to cool on the side.

Fruit & Veg Popsicles

With all this hot weather we’ve been having, there couldn’t be a better time to start making your very own cold and refreshing baby snacks. There are no rules about what you can add to these fruit and veg popsicles, so another great excuse for you to get creative. Fruit & veg popsicles are a nutritious treat for the whole family to enjoy.

4 different flavours to get you started

Pineapple, orange & carrot 

Fruit & veg popsicles

Ingredients:

  • 1 1/2 cup sliced orange
  • 1 1/2 cup grated carrot 
  • 1/2 cup pineapple juice

Directions:

  • Put all of the ingredients in a blender and puree until completely smooth.
  • Pour into popsicle moulds and freeze 6-8 hours (or until they are completely firm). Makes 5-6 popsicles.

 

Peaches & Cream 

Fruit and veg popsicles

Ingredients

  • 2 1/2 cup sliced peach (tinned or fresh)
  • 2 tablespoon – water
  • 1/2 cup – heavy whipping cream
  • 1/2 teaspoon – vanilla extract

Directions:

  • Put all of the ingredients in a blender and puree until completely smooth.
  • Pour into popsicle moulds and freeze 6-8 hours (or until they are completely firm). Makes 5-6 popsicles.

 

Strawberry & Greek Yogurt 

Fruit and veg popsicles

Ingredients:

  • 2 1/2 cup strawberries (hulled & halved)
  • 1 1/2 cup of greek yogurt
  • (If baby is over 12 months you can try adding 2 tbs honey for a sweet taste) 

Directions:

  • Put all of the ingredients in a blender and puree until completely smooth.
  • Pour into popsicle moulds and freeze for 6-8 hours (or until they are completely firm). Makes 5-6 popsicles.

 

Tropical Kiwi

Fruit and veg popsicles

Ingredients:

  • 1 1/2 cup chopped kiwi fruit 
  • 1 cup of banana (sliced) 
  • 1/2 cup of coconut milk
  • 1/2 cup of pineapple juice 

Directions:

  • Put all of the ingredients in a blender and puree until completely smooth.
  • Pour into popsicle moulds and freeze for 6-8 hours (or until they are completely firm). Makes 5-6 popsicles.
